This time of year is right up my alley! I love the cooler weather. The time with family. And of course, the food! I have already started watching Christmas movies. Drinking hot chocolate. Baking cookies. Drinking hot tea. And it feels amazing.
As we go through this holiday season, I will keep you all up to date with recipes that I use, and how I convert them to…not so sugary and calorie-y.
For example, last night I found this recipe on livforcake.com. It is for oatmeal and chocolate chip cookies. The ingredients and adjustments are below. I also used smaller cookie portions to make more cookies, so the calorie intake would be less. I actually only made 1/3 of the cookies and froze/refrigerated the rest.
1 1/2 All purpose flour
1 tsp baking soda
1 tsp cinnamon- the notes in the post said they would omit the cinnamon, so I did
1/2 tsp sea salt
1 cup unsalted butter
1/4 cup granulated sugar- I used Swerve granulated
1 cup light brown sugar- I used Swerve Brown Sugar
2 large eggs
2 tsp vanilla
3 cups rolled oats- I used 2 cups
2 cups semi-sweet chocolate chips- You can swap for sugar free chocolate chips, or even dark chocolate.
